How can Lars be his Half Grandson? He should technically be fully his grandson.

Cause lars wasn't his fully son of heihachi, since he's being an illegitimate son.
Or because he isn't a half-grandson, he is a full grandson of Jinpachi because Jinpachi is Lars' father's father. Just because Lars is illegitame doesn't make him any more or less related to his ancestors, they share the same amount of genes regardless.

Jinpachi's Demonic clasification[]
As per the last edit, we must establish whatever Jinpachi is a demon as a species. I don't think that is the case, let me explain why. All demonic activity in the Tekken universe derives from genes that humans possesses or in the case of Jinpachi and Akuma, mystical forces that they tap unto to get superhuman powers. As is established by the street fighter cannon, Akuma was born a human and thru training embraced the power of Satsui-no-hado (sorry if the spelling is wrong). That doesn't mean he is a demon, just that he got the characteristics that people associate with one. Akuma is still a human being, albeit with superhuman powers. In Tekken 5, where I think Jinpachi was introduced, he was a normal human being and he became something else when Heihachi imprisons him, but it's not because he is a demon, he doesn't even possess the devil gene. He does it so he can claim the Mishima Zaibatsu. The cannon establishes that Kasumi and her bloodline are the origins of the devil gene. Jinpachi just became possessed by an entity as he was dying or already dead.
